Plan Ahead Using Your Oven
By Pamm Clark

Sometimes I cook Once-A-Month, but most of the time I prepare one or two things a week in big batches to distribute the time and work. Sometimes I will make a few batches of meatball muffins on a day I want to serve them, package and freeze what I don't need for that day.

Spaghetti O' s Casserole

3 cans regular spaghetti o's
1 - lb ground beef
1/2 of a onion, chopped
2 cups mozzarella cheese
1/4 cup Parmesan or Romano cheese

Cook ground beef with onion until browned. drain off grease. Add the ground beef to the bottom a 8x8 in size casserole dish. Add Parmesan cheese on top of the meat. Then add all three cans of spaghetti o's and top with mozzarella cheese. Bake uncovered at 350 for about 30 minutes until casserole is nice and bubbly. Serve with french bread, Texas garlic toast and a salad.

You can make quick breads, muffins, and casseroles ahead of time, package them in meal-sized portions, label and put in your freezer. Look for a lot more recipes on my Leftovers On Purpose blog. Also, check out my Once-A-Month Cooking section.
